Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 and 1/2 cups milk
  • 1/4 cup vegetable oil

Instructions

  • Step 1: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • Step 2: In a separate bowl, beat the eggs and then add the milk and vegetable oil. Mix well.
  • Step 3: Add the wet ingredients to the dry ingredients and stir until just combined. Don't overmix the batter as this will result in tough and dense pancakes.
  • Step 4: Heat a non-stick pan or griddle over medium heat. You can also lightly grease the pan with oil or butter to prevent the pancakes from sticking.
  • Step 5: Use a ladle or measuring cup to pour the batter onto the pan, making pancakes of your desired size.
  • Step 6: Cook the pancakes for 2-3 minutes or until the surface of the pancakes is bubbly and the edges are slightly dry.
  • Step 7: Flip the pancakes over and cook for another 1-2 minutes or until the other side is golden brown.
  • Step 8: Repeat the process with the remaining batter, adjusting the heat as necessary to prevent the pancakes from burning.
